Flourless Chocolate Cake
This recipe is very easy with delicious results.
People always ask for the recipe. Beware, it is very
rich. Serve with fresh whipped cream and berries.
Serves 8-12
1 c. butter, in pieces
8 oz. semisweet chips (1 1/2 c.)
1 1/4 c. sugar
1 c. sifted, unsweet. cocoa
6 eggs
Preheat oven to 350. Grease and flour a 10 inch
springform pan (I've also made a 9 inch-just add to
the baking time).
Over low heat melt the chips and butter together, Set
aside.
In a large bowl, mix together the cocoa and sugar.
Whisk in the eggs. Then add the cooled butter and
choc. mixture.
Pour into pan. Bake for about 45 min.
Cool, cover and refrigerate. Can be made a day ahead.
Enjoy.
For variations: add chopped orange zest (1-2 tsp.)
or espresso powder (1 Tb.)
