Panache Pantry Chicken, Pasta + Giveaway


Have you ever heard of gourmet bread crumbs?  I had not, until the nice people of Panache Pantry sent me some samples.  Panache, a company founded by two at-home moms, have taken bread crumbs to a whole new level, whether it be their classic Sicilian line or their more modern products like Banana Nut Curry or Pumpkin Cajun (which I plan on sprinkling over ice cream as soon as I go buy ice cream).  It's such a brilliant, simple idea, and saves you the time of adding fresh herbs and spices to your boring old bread crumbs.  So far, I've sprinkled the Zucchini Rosemary crumbs over pasta...     


...and the Vintage Sicilian with chicken.  Take boneless, skinless chicken breasts, coat with mayo on both sides, sprinkle with bread crumbs on both sides, season with salt and pepper and bake at 350 for 20 minutes.  Trust me, if you don't like mayo, you will still love this.  It just makes for SUPER moist chicken.  And the Sicilian bread crumbs add such a depth of flavor.  Easiest dinner ever!

Halloween 'Temptation Candy' Giveaway!


I don't know about you guys, but we have been planning our Halloween costume since last November. And by "we" I mean, Jack.  I don't think a month has gone by without a costume discussion.  Of course, each month a new character is in the lead... Iron Man, Captain Iron Man (he exists), Luke Skywalker and now we're back to the Red Power Ranger.  Which is what he was last year.  "No, Mom, last year I was Jayden and this year I'm going to be Troy!"  Whatever that means.  Also, according to Jack, Etta is supposed to be R2-D2 and myself?  Yup, C-3PO.  Anyone have any gold spandex I can borrow?

New Weelicious Lunches Cookbook Giveaway!


One year ago today, my little Etta Jones was born.  Did 12 months really just go by??  It feels very cliche to say this, but kids grow up way too fast.  (Only kids, that is, we age at a snail's pace, right?)  Looong days, short years... that sums up being a parent.  Jack starts his last year of preschool next week, and before I know it I will be sending Etta off with packed lunches as well.  Time to have 12 more babies like the Duggar family.  And SPEAKING of packed lunches for lots of kids (I'm good at transitions), look what showed up on my doorstep yesterday!  Catherine McCord's new book!  If you're unfamiliar with Catherine and her site Weelicious, then you cray cray.  She creates the most unique, healthy and delicious dishes.  I've been obsessed with her first cookbook for awhile now, and I'm so excited to delve into this one, especially as a mom who has to make her son's lunch every day!  Also, is "delve" a word because it looks funny.  Hmm.

Ramen Burger + Annie Chun's Giveaway


Have you heard of the latest culinary craze, the Ramen Burger?  It's a burger sandwiched between two patties of fried ramen noodles, in place of a bun.  Sounds absurd, yes?  It is absurd.  AND WONDERFUL TOO. 

I was sent some products from Annie Chun's - a variety of all natural Asian Cuisine - and someone from their team suggested I try out the new "bun" with the ramen noodles.  It was easy to do and the result was oddly fantastic - crispy Ramen framing a juicy burger, yum. Follow these simple steps to create your own at home:

1. Cook noodles in 1 1/2 cups of boiling water for 1 minute.  Drain.  (I did not use the flavor packet)
2. Divide Ramen into 2 bowls or ramekins that resemble patty size. 
3. Place plastic wrap on top of noodles and weigh down with cans - tuna worked well for me.  Refrigerate for at least 15 minutes. 
4. Heat a couple tablespoons of olive oil in a small skillet over medium-high heat.  Carefully remove noodles from bowl and cook until golden brown on both sides.

Friday Giveaway!


It's been awhile since I have given you fine people something wonderful, so that's what I'm going to do today thanks to some wonderful products.  The people over at 'ips' (Intelligent Protein Snacks) and Stretch Island Fruit are letting me give away some delightful and healthy snacks.  I've been a fan of Stretch Island Fruit Leather for a long time - it's the perfect snack to keep in your purse - but I had never tried their fruit chews and was excited to let my hardest critic give them a go: Jack.  As a four-year-old, he's a fruit snack connoisseur and did I mention picky?  Well he loved them.  Also there are fun games on the packaging - sold.  Now ips - chips made with egg white protein - were something new to me.  The founder came up with the idea after realizing how much his kids (and I, even though he doesn't know me) enjoyed the crispy edges of eggs he cooked for them.  So he turned that concept into a chip!  Corn, egg whites, and other natural ingredients and they're awesome.  I'm giving away 3 different flavors.

Madhava Margarita + Giveaway


It's been awhile since I've done a giveaway, so let's do a giveaway!

An inspirational GIVEAWAY!



This is a first here at F for Food, but that last post inspired me to do it. 

Recently, as I glanced across my vast cookbook collection, at all of the words and images that inspire me daily in the kitchen, I thought I might just pass some of that inspiration along to you. I recently attended an event in which Michael Psilakis did a cooking demonstration. While he showed us how to make Greek sliders, he spoke of his inspiration, his father, who always encouraged him to follow what he loved. Much like Chef Psilakis, I have been lucky enough to have two parents that have always fostered my creativity. No matter what. 

That night, I received an autographed(!)copy of his beautiful cookbook: How to Roast a Lamb. The recipes and photography are inspired and inspiring. And I want to give this very cookbook to one of you!

Inspirato.


Yes, we have all heard that imitation is the sincerest form of flattery. And, on a base level and on the high-road level, I suppose it is. But, there is a fine line between imitation and inspiration.  Imitation versus inspiration is a perennial discussion in the art world and other worlds as well.  And, it is such valid dialogue.

Imitation:

Okay, so when Julie Esperes got her Coca-Cola shirt and acid washed, tapered, high-waisted Guess jeans in the sixth (or was it seventh?) grade, I really wanted them, too. But let's face it, it wasn't just Julie who had the Coca-Cola shirt or the acid washed, tapered, high-waisted Guess jeans in the sixth (or was it seventh?) grade. It was a trend. And yes, both Paz and I desperately wanted Johnny Depp as our boyfriend after watching the french-kissing scene in Cry Baby for the seventy-third time in a row. Again, I doubt we were alone.  Incidentally, while I do think I scored the jeans, I neither got the Coca Cola shirt nor Johnny Depp.

Occasionally, I have succumbed to and thoroughly enjoyed some trends and things I've seen my friends, or Madonna, do.  But the thing is, black rubber bracelets and all, I've known what works and doesn't work for me. No matter how many girlfriends of mine did it, I would never have dotted my i with a heart.

As I grew more and more into myself, the Me in me kept growing into more and more of Me.  More often than not I have marched to the beat of my own drum and had my own style, which admittedly has not always been super awesome (I didn't start shaving my legs until I was almost finished with college and I have given myself some truly atrocious haircuts/dye-jobs throughout my life).  My confidence in my passion and "wanting to to it my way" hasn't always worked.  Deciding on Film Noir as a 'major' in undergraduate school, or creating an independent study in roller skating for PE credit did not earn me points or make me too popular. 


Inspiration:

When I lived in Atlanta, I started playing with Polaroid cameras. All sorts. Then it moved into all plastic lens or toy cameras. I was fixated on the muted tones, blurred light, and the ephemeral quality of the prints. I was equally fixated on how what began as happy accidents, with light leaks and light streaks, could become purposeful and designed. Then certain artists began to stand out, almost like deciphering code for John Nash. I became enamored of photographers such as Nan Goldin, Uta Barth, Corrine Day, Terry Richardson and William Eggelston, to name a few. I was devouring publications like Purple, Big, Soma, Blind Spot and sweating publishers such as Steidle and Taschen.

And so I went back to school. To study photography. The funny thing was, though a very good school, it was an institution that focused primarily on advertising and professional photography - not art. From 35mm to 4X5 to medium format, from black and white to color, we studied every technical nuance of the science of light to the camera to the celluloid that went in it. I had to do mock Gap ads and even spent a week in the studio, with a house of cards of scrims and gels and filters trying to light a Michael Graves pepper mill in the style of German Expressionism. I called the final product The Pepper Mill of Dr. Caligari.


The thing is, throughout photography school, being taught technique and control, I really and truly grasped the concept of needing to understand rules before breaking them. And for one of my final projects, I cast aside the Hasselblad and picked up the Polaroid 600. I shot eight images, some of bright flowers and some of me and my then boyfriend nude and/or tangled up with one another. I then very coarsely sewed them together to create a Jacob's Ladder of sorts. I also had to also stand up and present and explain my work to a room full of wide-eyed, speechless classmates and teachers. I don't know that they quite knew what to do with it, or me, but I know they all appreciated my confidence in what I had created. It was the most personal and most beautiful piece of art I have made to date.

And now I have shifted again. For the past five years I have had this little food blog. Now I like to write. Now I want to write. Sometimes I write things that make me feel naked, or stupid, or trivial. Sometimes I write things that I know make my parent's toenails curl (like mentioning that Polaroid booklet). I don't know who's reading or what they think of what they see. But I know I need to do it. Whether it's understanding every frame of The Blue Dahlia, and talking about it, or taking pictures of pepper mills, Gap products or my sex life, or writing about what I eat, drink, cook or think about, I feel I have always had my voice.

And though I may have coveted my neighbors, so to speak, I have never emulated them. Nor could I. But without Nan Goldin, I don't know if I would have found the courage to be naked, be it on film or in words. And without Terry Richardson, if I would have understood the brilliance in the simplicity, and the validity, of a point and shoot camera with a built in flash. Without the publications that gave them a voice, I don't know if I'd keep making mine as loud as possible for so long.

And to be honest, this particular blog post is, in part, inspired by two other blog posts: one with words that are so profound, elegant and straightforward, that I feel I must run off to write every time I read a new post, and another one that had a beautiful and inspired looking recipe, that propelled me straight into the kitchen. I know I don't, and couldn't, write like Ellisa, even if I wanted to. Which I don't. Because, as I've said, I am me and I have my own voice. And I had no way to make the recipe Olga posted, because I did not have the time nor the ingredients. Instead, I took the two the parts of the dish that my eyes landed on in the photograph of the food, and the baking method (roasting), and figured out something of my own.

And it was delicious. And what's more, amazing food for thought.

Roasted Chicken Thighs with Blood Orange
*inspired by Sassy Radish's Roasted Chicken Thighs With Clementines
which was inspired by Jerusalemby Ottolenghi and Tamimi


Ingredients:

3 tablespoons olive oil
1/2 tablespoon kosher salt
1/4 teaspoon freshly ground black pepper
2 pounds (approximately 6) bone-in, skin-on chicken thighs 
1 medium shallot, thinly sliced
3 cloves of garlic, chopped
3 tablespoons fresh sage, coarsely chopped
1 medium blood orange, cut into very thin slices
3 tablespoons of blood orange juice
A splash of champagne
The juice of 1 Meyer lemon


Directions:

Preheat oven to 450 degrees.

In a large mixing bowl combine the olive oil, blood orange juice, lemon juice, champagne, shallot, salt, and pepper with 1/4 cup of water.

Add chicken to bowl and give everything a nice stir, so that the chicken is well-coated in the marinade, cover with plastic wrap, and refrigerate for a few hours or overnight. If you didn’t plan ahead and don’t have a few hours (or overnight) making this on the go works out perfectly fine.

Position the baking rack in the middle and heat the oven. Divide the chicken and all the marinade across (9x13x2-inch) roasting pan, so that there is enough room to accommodate everything comfortably in a single layer. Make sure the chicken skin is facing up. Wedge the blood orange slices among the chicken, throughout the pan. Sprinkle the sage and garlic equally over the chicken. Roast for about 45 minutes or until the chicken is nicely browned and cooked through, basting 3 or 4 times during the first 30 minutes. The edges of some of the clementines will start to look burnt. Check on the chicken about 35 minutes into the roasting process and if you think that the liquid is beginning to dry up add a splash more water (or use your judgment).

Serve chicken with some of the caramelized orange slices an a drizzle of the drippings from the roasting pan.

Chocolate Chip Banana Snack Cake

Hello!  It's me.  I'm tired.  If I stop making sense somewhere in this post, chalk it up to no sleep and too much coffee...

With both of my childbirth experiences, I've come home from the hospital and all I can think about are the nurses who took care of me while I was there.  Honestly, when I come back in another life as a better person, I will come back as a Labor & Delivery RN.  Unless karma is a real thing because then I'll probably come back as a piece of chewed gum.  Anyway, those nurses are angels, catering to you in your most humble, most vulnerable, most joyful life moment.  So after giving birth to both of my babies, I brought baked goods to the hospital as a small token of thanks.

After giving birth to Etta, I found this recipe but added 3 ripe bananas to the wet ingredients.  I also used mini chocolate chips in the batter.  It was stupid good.  Moist, messy, full of chocolate and banana flavor - I want more right now.

Weelicious Guest Post + GIVEAWAY ~ Chocolate Chip Granola Bars

With back-to-school season in full swing I find myself running more errands and having less time for those important tasks, like you know, feeding myself and my children!  I know... on those busy mornings when you don't have time for breakfast, there's nothing easier than tossing a granola bar into your child's lunch box and another one into your purse, but a majority of the brands on the market are not as healthy as their manufacturers would lead you to believe.  Plus, they are made with ingredients I can't even begin to pronounce. 

These Chocolate Chip Granola Bars are unbelievably delicious and, if you wrap them individually, just as easy to grab when you're on-the-go as the ones you buy at the market (plus, you'll have no problem pronouncing all the ingredients in these).  But the best part?  Most pre-packaged bars will run you a dollar or more, compared to the less than $4 it costs to make this recipe (and don't forget the time you'll also save not having to go to the grocery store).

These bars are versatile, too!  You can easily replace the chocolate chips with naturally sweet dried fruit like cranberries, cherries or raisins.  Chewy and crunchy with toasted oats and a sweet surprise in every bite, these Chocolate Chip Granola Bars are a must for your back to school rotation!


Chocolate Chip Granola Bars

4 cups old fashioned oats
1/4 cup whole wheat flour
1/2 cup shredded unsweetened coconut
1/3 cup brown sugar
1 cup chocolate chips*
1/2 teaspoon kosher salt
1/2 cup canola oil
1 teaspoon vanilla extract
1/2 cup honey

1. Preheat oven to 325 F.
2. Combine the first 6 ingredients in a bowl.
3. In a separate bowl, whisk together the remaining ingredients.
4. Pour the wet ingredients over the oat mixture and stir to combine.
5. Place granola mixture on a parchment lined baking sheet and shape into a rectangle, about 13x9x1 inch thick.
6. Bake for 40 minutes or until edges begin to turn golden brown and it is set.
7. Allow to cool completely then cut into 3-inch x 1-inch bars.**

*You can substitute raisins or other dried fruit for the chocolate chips.
**Individually wrapped, the bars will remain fresh for several weeks.

Salted Chocolate Chip Cookies with Coconut Sugar + Giveaway!

Hello!  Happy Tuesday!  I'm still here!  With child!  Faking enthusiasm!  Baking cookies!


Baking very, very tasty cookies, I might add.  Recently, I was sent some wonderful products from Madhava Natural Sweeteners - products that provide alternatives to highly processed sugars and artificial sweeteners.  Pure Honey, Agave Nectar in all sorts of flavors (including vanilla and maple) and Organic Coconut Sugar.  I was particularly interested in trying out the sugar, which is described as mild and sweet in flavor, gluten free, vegan and the perfect all-natural one-to-one replacement for refined sugars.  Baking time!  More exclamation marks!


I tried it out in a basic chocolate chip cookie recipe, adding some flaked sea salt on top because that makes everything better.  I substituted granulated sugar with coconut sugar but still added some organic brown sugar resulting in THE softest cookie I've ever tasted.  And because the coconut sugar is milder, it's not overly sweet.  Of course I added buckets of chocolate chips - but it's all about balance, right?

Salted Chocolate Chip Cookies with Coconut Sugar
(Makes 2 dozen)
Printable Recipe

1 cup (2 sticks) unsalted butter, room temp
3/4 cup Madhava Organic Coconut Sugar
3/4 cup brown sugar
1 tsp vanilla
2 large eggs
1 cup all-purpose flour
1 1/4 cups bread flour
1 tsp baking soda
1 tsp salt
2 1/2 cups chocolate chips
Sea salt for sprinkling on top

Preheat oven to 375.  In a bowl with an electric mixer, cream together butter and both sugars until smooth.  Add vanilla and eggs, and beat until combined.  In a separate bowl, whisk together flours, baking soda and salt.  Add to wet ingredients and beat until just combined.  Stir in chocolate chips.  Drop by rounded spoonful (or I like to use an ice cream scooper) onto parchment-lined baking sheets.  Sprinkle with sea salt.  Bake for 8-10 minutes, or until just golden around the edges.

Hamburger into Meatballs (and a giveaway!)


Confession: I don't know how to turn on a grill.  I should probably figure that out someday.  And also the difference between a Phillips and Flathead screwdriver.  Someday.  For now, I'm lucky to have Carson who rolls his eyes as he hands me the correct tool and absolutely knows how to turn on the grill.  In fact, his grilled salmon and hamburgers are two of my favorite things to eat, in this world.  We had hamburgers on Saturday night and leftover ground meat on Sunday, so he decided to turn them into grilled meatballs.  Genius.  Here are his tips on how to convert the two dishes...

I make my hamburgers relatively simple - worscestershire sauce, a teaspoon of liquid smoke, salt and pepper - so it's not complicated to turn that into something else.  For the meatballs, I added one large egg, panko, olive oil, italian seasoning, a hint of nutmeg and grated Parmesan and Romano cheese.  Jack and I rolled them into ping pong-sized balls, and I grilled them over very high heat on a cast iron skillet (with a little olive oil), constantly moving them to char on all sides (about 5 minutes total).

Giveaway Winner


I had Chick-fil-A for the first time ever last night.  A chicken sandwich, a few nuggets and some waffle fries.  I inhaled it all so fast I had trouble breathing for hours after.  Sexy.  Moving on...

Momofuku Milk Bar Compost Cookie PLUS Giveaway!


Sometimes I get comments from readers saying, "I love your blog - you make me WANT to cook, but I don't."  It always makes me smile, to think that my little old blog might almost, sort of, just about inspire people to do something they're not used to doing.  Even if they're just thoughts for now.  So, in honor of those people, I decided to make a cookie from a box.

Have you ever heard of the Momofuku Milk Bar in New York?  I have never been, but I've heard from many people how amazing everything is there, especially their Compost Cookie.  So when I saw that it came in box form at Williams-Sonoma, I quickly bought it.  And quickly made it.  And even quicker devoured the sweet and salty treat.
