Banana Cinnamon Waffles

bananawaffles-titus-4

I was really happy to discover this recipe, originally from Weelicious, because Titus loves them. And they're perfect to stash in the freezer and pull out for breakfast, a packed lunch, or a quick snack. They're not terribly unhealthy, either. Although, when you add pancake syrup, it's another deal entirely...

Banana Cinnamon Waffles
150 g all-purpose flour
75 g whole wheat flour
1 tsp cinnamon
1/2 tsp salt
2 tsp baking powder
2 bananas, very ripe, mashed
1 egg
180 ml milk
1 tbsp honey
1/2 tsp vanilla extract

Mix the dry ingredients in one bowl, and then stir together banana, egg, mill and vanilla in another bowl. Add the wet ingredients to the dry and stir until just combined.

Cook in your waffle iron for a few minutes, until done. If you want to freeze them for later, place them to cool on a rack, then freeze separately before sticking them in a ziplock bag.

Then, just re-heat in a toaster!
