Quick Zucchini Saute


I often get in a rut with a vegetable, preparing it the same way over and over again. But that is what the Internet is for, no honestly, that is why they invented it: to cure our dinnertime blues. I found this dish and especially loved the "only takes 5 minutes" part. True story, really only does take that long. I go back and forth between loving my vegetables roasted until they're so crispy they no longer have nutrients orrrrr perfectly al dente. This one is the latter, and it's delicious.


*I used pine nuts because I didn't have almonds, but I think they give off more flavor and I loved the addition...
